G's famous small game recipes!


Honey BBQ Rabbit

 

2  rabbits (cleaned & cut up)
1  bottle BBQ sauce (16 oz)
1/4 cup of honey
1/2 cup of water
season salt and pepper to taste

 

In a large sauce pan add rabbit.  Cover rabbit with water just enough to cover meat.  Boil on high for 30 minutes.  Drain rabbits in strainer.  In a large casserole dish add 1/2 cup of water and the rabbit.  Next, season salt and pepper every piece of rabbit.  In a small bowl, add BBQ sauce and honey.  Stir and mix well for 2 minutes.  After the sauce is mixed, pour over each piece of rabbit.  Once rabbit is covered with honey bbq sauce cover casserole dish with foil and place in the oven for 60 minutes at 350 degrees.  Pull out of oven after 60 minutes, remove foil and serve!

Skillet Fried Squirrel

3  Squirrels (Cleaned & Cut up)

2  Cups of Flour
1/2 Teaspoon Black Pepper
1/2 Teaspoon Season Salt
2  Sticks of Butter
1/4 Cup Canola Oil

In a large pot add squirrel and water (just enough to cover the squirrel).  Place on stove and boil squirrel for 30 minutes.  Next, drain the squirrel in strainer.  In a gallon Ziplock baggie add the flour, black pepper and season salt. Seal baggie and shake to get ingredients mixed in.  Open baggie and put the squirrel piece's in, seal and shake baggie until all piece's of squirrel are covered in the flour mix.  In a large skillet over medium heat add 2 sticks of butter and the canola oil.  When butter has completely melted, remove squirrel from baggie and place in skillet.  Cook squirrel on both sides until squirrel is golden brown. remove and serve.

Herb Roasted Game Hens

4  Cornish game hens
2  sticks of butter (melted)
2  cloves of garlic (minced)
1  tablespoon dried parsley
1/4 teaspoon season salt
1/4 teaspoon pepper
1/4 teaspoon ground sage
1/4 teaspoon dried thyme
Non-stick cooking spray

Take a 9 x 13 casserole dish and spray with non-stick cooking spray.  Place game hens in casserole dish breast side up.  In a microwavable bowl add butter and microwave for 90 seconds until butter is melted.  Remove melted butter from microwave and add the garlic, parsley, season salt, pepper, ground sage, and thyme.  Mix well.  Take a basting brush and heavily coat the game hens in the butter and herb mix.  When done basting, place game hens in oven for 90 minutes at 350 degrees.  Pull from oven and serve.
